We visited Scottie's on a Sunday because we had to try their cheese stuffed crust slices. They only offer this on Sunday, so plan your visit accordingly. Scottie's was opened by Scott Rivera, a lifelong pizza lover. He was born in Brooklyn, lived in New Haven, CT, and has always had a major interest in great pizza. When he moved to Portland in 2012, he studied the craft under solid mentors at Handsome Pizza and East Glisan Pizza Lounge.

Scottie's is a New York style pizza parlor on lower SE Division St. They serve pizza by the slice, have a small seating area, and it definitely reminded me of the pizza joints I have visited in NYC. As I have mentioned before, this blog is all about finding the best slice of pizza in Portland. I felt Scottie's should make the candidate list, despite knowing their obvious disadvantage. "Pizza by the slice" restaurants typically cook pies, then reheat them when individual slices are ordered. If demand is not high enough, this can mean pies sit out, and are re-heated upon order. This unequivocally takes away from the overall freshness and quality of the slice. That being said, Scottie's overcomes a lot of this with their leavened dough, fresh ingredients (including house made mozza), and overall variety of slices.

I sampled the pepperoni cheese stuffed crust, Sicilian pan baked (margherita style pie), and the white pie. My favorite was the Sicilian pan baked. It had a really unique crust, which I loved. The Sicilian is cooked in a cast iron pan. This creates a charred cheese flavor on the edge of the crust. I enjoyed this flavor and texture. I also love when the basil is topped after the bake, as it was on this slice.
The cheese stuffed crust was a lot of fun. The pepperoni, cheese, and sauce all tasted of high quality. The dough was money too. The cheese in the crust was a bit underwhelming though. My expectations were liquid cheese magma, and it was more of a slightly melted shredded cheese stick. I still enjoyed it though!
The white pie tasted good, but wasn't that memorable for me. It was my third favorite of the three slices.

Scottie's also pays it employees $15/hour minimum. I was surprised to learn this, and in an ever changing city (in terms of cost of living), I appreciate they are able to make this work for them.
Recommendation: Go on a Sunday and give the cheese stuffed slices a try. Ordering the Sicilian is also a must.
