Handsome - Visit #21


      Handsome Pizza is located in the One Stop Building on NE Killingsworth Street in the trendy hub near Podnah's Pit. Handsome puts out seriously good wood fired pizza utilizing local growers and makers including Chop Butchery, Flying Coyote Farm, Sauvie Island Organics, Camas Country Mill, and more. Handsome's space is super unique as well. It is shared by both Seastar Bakery and Handsome. The space is centered around their beautiful wood fired oven.

Margherita
             This was a fun visit for Veggie Doughboy and I, highlighted by our chat with Matt Kedzie (@flosskar) Partner/Pizzaiolo at Handsome. Matt was a wealth of knowledge and excellent host to the doughboys and our partners. 

               My favorite part of Handsome's pizza is their crust. They are doing something really special here by making their dough with 25% wheat flour. I have experimented with making pizza dough with wheat flour, and it is not easy. The elasticity is drastically different and much more difficult to work with. It is a challenge to shape and stretch the dough, and get good puff on the crust. I have a lot of respect for Handsome doing something unique and challenging with their flour choice. 

             The crust is so flavorful! With every bite that wheat crust flavor comes through. Personally, I thought it was delicious. If you love wheat flavor, you will absolutely love this crust. Veggie Doughboy liked the pizza as well, but felt the stronger flavor of the crust took away from other aspects of the pizza. He can be a bit of a traditionalist.

The Steve Lieber
             The Steve Lieber is made up of tomato sauce, fresh mozz, cream, garlic, mushroom, shallot, and rosemary. This was an excellent pie. I loved the tomato sauce on every red pie we tried. Handsome uses Bianco Dinapoli tomatoes for their base. The wonderful flavor of the tomatoes comes through. You can tell they keep it simple making their sauce. The sauce is also more chunky than most. Something I really like. I loved the addition of the rosemary to this pie as well. They put on just the right amount. It was an excellent flavor burst that worked really well. 

The Colin Couch

              The Colin Couch consists of tomato sauce, fresh mozz, parm, herbs, bacon, pepperoni, and colin couch memorial hot sauce. This was another great pie. The ingredients were super fresh and the flavors worked well together. The pepperoni had a unique, artisan flavor, which I liked.

The Rico Sauve

           The Rico Sauve is made up of aged mozz, ricotta, garlic, oregano, cracked pepper, and lemon zest. This was probably our favorite pie of the night. Both Veggie and I love white pies with lemon zest. This is a killer combination that isn't used enough. The strong lemon flavor also went well with the stronger flavor of the wheat crust. Veggie made a good point, the more flavorful wheat crust puts more pressure on the rest of the pie having bold flavors. If it doesn't the wheat flavor can be a bit overpowering compared to traditional pies. 


         We got a chance to try some of Seatstar's bread, made by Matt. It was delicious. I would highly recommend joining Seastar's CSA and definitely try their bread next time you visit.


          This may be the best chocolate chip cookie I have ever had. This was also baked by Seastar with local flour. So good! I didn't have room for it after pizza, but I made some!
